That’s it, I drank the kool-aid and bought an InstaPot…well the CrockPot version on Black Friday weekend. The 6 quart version was on sale for $50 and after reading all of the reviews and being on the fence for so long I decided to just treat myself.
Then it sat on the floor of my home office until this week.
Yes, you read that correctly. I wanted it for months and didn’t open for over two weeks once it arrived. Well that all changed on Tuesday. I was in the break room at work talking to some of my new co-workers and one of them mentioned that she was able to cook her whole meal in under 30 minutes. She told me how she’d cooked frozen chicken, lentils, spare ribs and more in less than an hour in her InstaPot and I just knew I had to try mine out. I came home that night, opened the box up, cleaned it and did a test to make sure that it was working properly before I gave it a go.
Y’all! I made rice pilaf, chicken breasts and mixed veggies in 20 minutes! I even used frozen chicken breasts! Everything was fully cooked and the chicken was so tender and juicy. I was sold at that moment and knew that I would using it more and more. I’m still learning to find joy in cooking so I don’t always have the energy or desire to come home and cook in the evenings. I meal prep, but that’s primarily for lunch so I’m not always eating out, so often time I would just come home and eat a sandwich or salad and call it a night. This device changes all of that.
I wasn’t sure if I would want to keep both my CrockPot and Express Pot out in my kitchen since I have such limited counter space, but I think I can make room for them both. I’ll probably stick to Slow-cooker Sundays and use my Express Pot throughout the week when I want to cook.
I’ve already made red beans and rice in it (in under 20 minutes) and even boiled eggs in less than 8 minutes, but here are a few more recipes I have my eye on. I just need to hit up the grocery store and I will be in business!
