It’s finally starting to feel like Fall in Houston and that’s when my Crockpot really earns it’s keep. I don’t know what it is, but I just feel so accomplished after I get a meal started in that thing. It’s one of those set it and forget it (for like 7 hours) devices and one of the easiest ways for me to use. I’ve been favoring chicken recipes recently and I wanted to share a few of them with y’all.
One of my grocery staples is the boneless, skinless chicken breasts from HEB, I typically get them with every Instacart order, and they’ve become the star in my Crockpot meals. I’ve used the following recipes as a base and tweaked them a bit to best fit my tastes and I’m sure y’all can do the same!
Easy Italian Chicken recipe – I just cooked this recipe this past Sunday and the name fits it perfectly. I literally put frozen chicken breasts, a bottle of Italian dressing and because I love chicken stock I used a Knorr bullion cube and a little bit of water. I let it cook on low for 7 hours and paired it with some rice and collard greens. The perfect Sunday dinner.
Broccoli Chicken and Cheese – I alternate between making this as a casserole and just serving it over rice. I started off using this recipe, but I’ve made it even easier by just using cream of chicken, broccoli, various seasonings along with the chicken breasts and I cook it on low for 6-7 hours. I top it with cheese if I’m serving it over rice or mix the cheese in if I’m making it as a casserole. Super easy and really delicious!
Chicken noodle soup – I have a feeling that I’ll be making this a few times this season. Great for lazy weekends and for when I feel under the weather. I learned my lesson the hard way with this one and I will make sure that I use the right amount of noodles so I don’t end up with a drier soup. I altered this recipe a bit; I chose not to use celery seed, lemon juice and minced garlic, and I subbed the yellow onions for my favorite seasoning blend by Picsweet. Fun fact, this recipe was the one that helped me stock my spice shelf.
Chicken tacos – I was craving chicken tacos something fierce a few weeks ago and I was lucky enough to stumble across this recipe. Y’all! I had everything for this in my cabinet at home. I was going to use salsa on the tacos and I had seasoning because I usually use ground turkey for tacos at home. Once again I cooked it on low for 6 hours and shredded the chicken before letting it sit for another 45 minutes. So delicious!
