Like a lot of people, I grew up eating loads of peanut butter. PB&J or peanut butter and syrup sandwiches were quite normal in my household. While we loved many types of peanut butter, there was a brand that was pretty consistent in the cabinet. My mom loved Peter Pan and so did me and my sister. So when I was given the opportunity to try out their new ‘Simply Ground’ line I jumped at it.
I immediately made my favorite peanut butter and syrup sandwich with the honey roast flavor and got inspired to made peanut butter cookies. I did a quick search on Pinterest and found an easy 3-ingredient recipe. I tweaked it a bit because I had a hankering for chocolate chips.
After a quick trip to my local grocery store and gathering all of the ingredients that I needed, I got to work. Doubling the recipe that I found (2 eggs, 2 cups of peanut butter, 2 cups of sugar) and adding in chocolate chips I was able to get everything mixed and in the oven within 15 minutes. Another 15 or so minutes of baking and my cookies were finished.
I didn’t realize how easy it was going to be. That was my first time baking cookies from scratch (I favor the break-and-bake variety), but I loved the process and the results so much that I made a batch for my co-workers and a batch for a party. I definitely see myself making this super easy recipe again in the near future.
