No, your eyes aren’t wrong. I definitely skipped over week 9, but that’s because I was in Toronto. In fact that was the day of Drake’s show so I definitely wasn’t posting. Had I thought about it I would’ve scheduled a post ahead of time, but I didn’t think about it. So now we’re at week 10 and I’m back!!
This week’s questions are geared towards food.
If you could only eat one thing for the rest of your life, what would it be?
Umm…this one’s hard because I have a few favorite food dishes. I think I’d have to go with broccoli, cheese, turkey and rice casserole. I would’ve chosen potato salad, but I think I’d get more food groups covered with the casserole.
What’s your guilty pleasure/comfort food?
Southern cooking. I don’t want to narrow it down to one particular dish because I like a lot. I love my grandma’s cooking! It might not be the healthiest, but it tastes so good!
What’s the weirdest/craziest thing you’ve ever eaten?
Caviar. Bleh. I’m not a fan of it. I don’t know if it’s the consistency or the saltiness, but I don’t like it.
What foods do you avoid at all costs?
Strawberries! I’m deathly allergic.
People always tell me that I don’t know what I’m missing when I tell them that I’m allergic to them and I tell that I do. Death.
What meal reminds you of your childhood?
My mom’s spaghetti. I don’t what it was about it, but it was always kind of sweet. I think she added ketchup to it. My aunt made it once recently and I started crying because it reminded me so much of my childhood and made me miss my mom.
Share one of your favorite recipes and the story behind it.
Okay, so I’m going to start this off by saying that I’m not the best cook in the world. I don’t have a passion for cooking. It doesn’t give me life at all! I was definitely blessed to find Chuck because he likes to cook; we made a deal that I would do the cleaning if he did the cooking and I’m going to hold him to that.
BUT!!
Every Thanksgiving I try and prepare a chocolate pecan pie that my Aunt Dorthy taught me how to make. It’s really rich and delicious!! This is the recipe we follow:
Ingredients
- 1 cup all-purpose flour
- 1/2 cup butter
- 1 cup finely chopped pecans

1 (8 ounce) package cream cheese - 1 cup confectioners’ sugar
- 3 cups frozen whipped topping, thawed
- 1 (3.9 ounce) package instant chocolate pudding mix
- 1 (3.4 ounce) package instant vanilla pudding mix
- 3 cups milk
- 2 tablespoons chopped pecans
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cut the butter into the flour with a pastry blender or two knives, until mixture resembles coarse meal. Stir in pecans, press into bottom of a 9×13-inch baking dish and bake 15 minutes, or until golden. Cool completely.
- In a medium bowl, combine
cream cheese, confectioners’ sugar and 1 cup whipped topping with electric mixer until smooth. In a separate bowl, whisk together chocolate pudding mix, vanilla pudding mix and milk until there are no lumps. Combinecream cheesemixture and milk mixture and stir until smooth. Pour onto cooled crust. Spread remaining 2 cups of whipped topping on top of pudding mixture. Sprinkle 2 tablespoons of chopped nuts over all. Chill in refrigerator until serving.

I know a lot of spaghetti recipes call for a dash of sugar which makes it sweeter. I'm not a huge fan of sweeter spaghetti sauces. I mean I'll still eat them and all, but that's not what I prefer, probably because I don't remember my mom's spaghetti being sweet.
